Koessen, a small village located at the foot of the majestic “Wilder Kaiser Mountain” in Tyrol, is the home of our small chocolate factory. We produce hand-moulded chocolate specialities, using only organic ingredients, such as cocoa “Fino de Aroma” from Ecuador, cane sugar from Paraguay, as well as the milk powder, which originates from farmers within an hour drive away from our factory.
Our high-quality chocolate is refined with a selected blend of organic herbs from the Wilder Kaiser Mountain”, harvested in summer and then, for 2 months preserved in a high-quality, organic safflower oil. Preserving the herbs in such an oil extracts the active ingredients, which we use in different and well thought out combinations depending on each single chocolate flavour. We use different combinations of herbs for our chocolates. Our white chocolate is blended with bitter herbs to balance the sweetness, whereas a combination of sweet herbs is used for our dark chocolate. A blend of at least 7 herbs is used for each individual chocolate flavour.
The foundation of our premium quality chocolate is the time and passion we invest in the production process. Thus we proudly consider our chocolate specialities “slow-food”.
